- 1 lb beef sirloin, thinly sliced
- 2 tbsp olive oil
- 1 medium onion, chopped
- 2 cloves garlic, minced
- 8 oz mushrooms, sliced
- 1 cup beef broth
- 1 cup sour cream
- 1 tbsp Worcestershire sauce
- 1 tsp Dijon mustard
- Salt and pepper, to taste
- 12 oz egg noodles
- 2 tbsp butter
- Fresh parsley, chopped
Instructions
- Bring a large pot of salted water to a boil. Add the egg noodles and cook according to package instructions for 8-10 minutes. Drain and toss with 2 tbsp butter. Set aside.
- Heat 2 tbsp olive oil in a large skillet over medium-high heat. Add the beef and cook for 3-4 minutes until browned. Remove and set aside.
- Add the chopped onion and minced garlic to the skillet. Sauté for 2-3 minutes until the onion is translucent.
- Stir in the sliced mushrooms and cook for about 5 minutes until tender.
- Pour in 1 cup beef broth, scraping the bottom of the skillet. Bring to a simmer, then stir in sour cream, Worcestershire sauce, and Dijon mustard until smooth.
- Return the beef to the skillet and season with salt and pepper. Simmer for 5 minutes, allowing the flavors to combine.
- Serve the beef mixture over the buttered noodles and garnish with freshly chopped parsley.
Notes
For a lighter option, you can use low-fat sour cream. Consider adding fresh herbs for an enhanced flavor.
