Description

Colcannon is a traditional Irish dish made of creamy mashed potatoes and tender kale, rich in nutrients and flavor.


Ingredients

Scale
  • 1 kg Kartoffeln
  • 200 g Wirsing
  • 100 ml Milch
  • 50 g Butter
  • Salt and pepper to taste
  • Chopped spring onions (optional)

Instructions

  1. Prepare the potatoes by peeling and cutting them into cubes. Place the potato cubes in a pot of salted water and bring to a boil. Cook until soft, about 15 to 20 minutes.
  2. Steam the kale by cutting it into strips and using a steamer for about 5 to 7 minutes until tender.
  3. Mash the cooked potatoes by draining the water, returning them to the pot, adding milk and butter, and mashing until desired consistency is reached.
  4. Fold in the steamed kale carefully to ensure even distribution.
  5. Season the mash with salt and pepper to taste.
  6. Serve the Colcannon hot, optionally sprinkling with chopped spring onions for added freshness.

Notes

Colcannon is great for meal prep, lasting 3 to 4 days when stored in airtight containers. You can also try adding other vegetables like kale or broccoli for added nutrients.
