Description
Colcannon is a traditional Irish dish made of creamy mashed potatoes and tender kale, rich in nutrients and flavor.
Ingredients
Scale
- 1 kg Kartoffeln
- 200 g Wirsing
- 100 ml Milch
- 50 g Butter
- Salt and pepper to taste
- Chopped spring onions (optional)
Instructions
- Prepare the potatoes by peeling and cutting them into cubes. Place the potato cubes in a pot of salted water and bring to a boil. Cook until soft, about 15 to 20 minutes.
- Steam the kale by cutting it into strips and using a steamer for about 5 to 7 minutes until tender.
- Mash the cooked potatoes by draining the water, returning them to the pot, adding milk and butter, and mashing until desired consistency is reached.
- Fold in the steamed kale carefully to ensure even distribution.
- Season the mash with salt and pepper to taste.
- Serve the Colcannon hot, optionally sprinkling with chopped spring onions for added freshness.
Notes
Colcannon is great for meal prep, lasting 3 to 4 days when stored in airtight containers. You can also try adding other vegetables like kale or broccoli for added nutrients.
