- 1 red onion
- 1 piece ginger
- 1 tbsp olive oil
- 3 tbsp tomato paste
- 1 tsp brown sugar
- 400 g chopped tomatoes
- 100 ml water
- 2 tbsp curry powder
- 1 tsp sweet paprika powder
- 1 tsp dark balsamic vinegar
- 1/2 orange
- juice of 1 lemon
- salt and pepper to taste
Instructions
- Prepare the ingredients by peeling the garlic, onion, and ginger, and chopping them into small cubes.
- Heat a frying pan and add olive oil, sautéing the chopped ingredients over medium heat for about 3-4 minutes until soft and fragrant.
- Add the tomato paste and roast it briefly with the other ingredients for deeper flavor.
- Incorporate the brown sugar, stirring until it dissolves to balance the acidity of the tomatoes.
- Add the chopped tomatoes and water, mixing well to combine the ingredients.
- Season with curry powder, sweet paprika, balsamic vinegar, salt, and pepper.
- Let the sauce simmer for about 10 minutes to allow the flavors to meld, stirring occasionally.
- Add the fresh orange juice and lemon juice for a bright, fruity flavor.
- Blend the sauce with an immersion blender or in a blender until it reaches the desired consistency.
- Serve the sauce with grilled sausages and enjoy!
Notes
Add extra vegetables like bell peppers or carrots for more nutrition. The sauce can be made ahead and stored in the fridge.
