- 4 boneless, skinless chicken breasts
- 1/2 cup honey
- 1/4 cup low sodium soy sauce
- 3 cloves minced garlic
- 1/2 teaspoon ground ginger
- 1/4 teaspoon black pepper
- 4 large Russet or Yukon Gold potatoes
- 1/2 cup milk (or almond milk)
- 4 tablespoons unsalted butter (or olive oil)
- Salt and pepper to taste
- Fresh chives for garnish
Instructions
- Marinate the chicken by whisking together honey, soy sauce, garlic, ginger, and black pepper in a bowl. Add chicken and coat well. Cover and let sit for 30 minutes or longer.
- Prepare the mashed potatoes by peeling and cubing them, then boiling in salted water until tender. Drain and return to pot.
- Mash the potatoes with milk and butter (or olive oil) until smooth. Season with salt and pepper, keeping warm on low heat.
- Cook the marinated chicken in a skillet with olive oil over medium heat for 6-7 minutes on each side until golden brown and cooked through.
- Add the reserved marinade to the skillet and simmer for 2-3 minutes to thicken. Serve chicken over the mashed potatoes, drizzled with the sauce, and garnished with chives.
Notes
For a healthier twist, consider using chicken thighs instead of breasts, and feel free to customize the mashed potatoes with garlic or cheese.
