Description

Maqluba is a traditional Middle Eastern dish featuring tender chicken, aromatic rice, and crispy cauliflower, layered and flipped for an impressive presentation.


Ingredients

  • 1 whole chicken (approx. 1.5 kg)
  • 1 bunch of soup greens
  • Salt
  • Freshly ground black pepper
  • 2 liters of water
  • 1 large cauliflower
  • 200 g long-grain or basmati rice
  • Oil for frying
  • 1 tsp turmeric
  • ¼ tsp ground cumin
  • ¼ tsp freshly grated nutmeg
  • ¼ tsp ground coriander
  • 1 pinch of cayenne pepper
  • 1 pinch of ground cardamom

Instructions

  1. Prepare the soup greens by cleaning and roughly chopping them.
  2. Add the chicken, soup greens, salt, pepper, and about 2 liters of water into a large pot.
  3. Bring to a boil and then cook over medium heat for about 35 to 40 minutes.
  4. Remove the chicken and let it cool slightly.
  5. Strain the broth through a sieve and set aside for later.
  6. Break the cauliflower into small florets and slice.
  7. Fry in hot oil until golden brown in portions.
  8. Drain on kitchen paper.
  9. Shred the chicken, removing skin and excess fat.
  10. Wash the rice thoroughly until the water runs clear, then let it drain.
  11. Layer the chicken in a large pot or roaster, followed by the fried cauliflower.
  12. Spread the rice evenly over the cauliflower.
  13. Sprinkle the spices over the rice.
  14. Gently pour about 800 ml of the prepared chicken broth over the rice.
  15. Cover the pot with a lid.
  16. Cook over low to medium heat for about 20 minutes.
  17. Let it sit uncovered for another 10 minutes until the liquid is fully absorbed.
  18. Let the pot rest for a few minutes.
  19. Invert the pot onto a large serving platter to serve the Maqluba.

Notes

For best results, wash the rice thoroughly and avoid using too much broth to maintain layers when inverting.
