- 8 oz cream cheese, softened
- 1/2 cup unsalted butter, softened
- 4 cups powdered sugar
- 1 tsp vanilla extract
Instructions
- Preheat your oven to 350°F (175°C) and line a muffin tin with cupcake liners.
- Combine dry ingredients: In a bowl, whisk together flour, sugar, baking soda, cocoa powder, and salt.
- Mix wet ingredients: In another bowl, combine oil, buttermilk, eggs, food coloring, vanilla, and vinegar until smooth.
- Add wet mixture to dry ingredients and stir gently until just combined, being careful not to overmix.
- Fill each cupcake liner about two-thirds full with batter.
- Bake for 18-20 minutes, or until a toothpick inserted comes out clean.
- Cool the cupcakes in the pan for 5 minutes, then transfer to a wire rack to cool completely.
- Prepare the cream cheese frosting by beating together cream cheese and butter until creamy, then add powdered sugar and vanilla.
- Frost the cooled cupcakes using a piping bag or spatula.
Notes
For best results, use room temperature ingredients and do not overmix the batter.
