Ingredients

- 2 medium eggs
- 1 pinch of salt
- 70 grams erythritol (or xylitol)
- 200 grams Skyr
- 200 grams spelt flour (or wheat flour)
- 1 teaspoon baking powder (slightly heaped)
- 1/2 teaspoon baking soda
- 80 milliliters sparkling water (highly carbonated)
Instructions
- Separate the eggs carefully, ensuring no yolk gets into the egg whites.
- Beat the egg whites with a pinch of salt until stiff to give the waffle mixture more volume.
- Whip the egg yolks with the erythritol in another bowl until frothy.
- Mix the spelt flour with the baking powder and baking soda in a separate bowl.
- Stir the Skyr with the sparkling water in another bowl for moisture and creaminess.
- Add the dry ingredients and the Skyr-sparkling water mixture into the egg yolk-erythritol mix.
- Fold the beaten egg whites gently into the batter using a spatula to keep the waffles fluffy.
- Preheat the waffle iron and lightly grease it before adding the batter.
- Bake until golden brown, about 6-8 waffles.
- Enjoy warm, plain or topped with fresh fruit, yogurt, or sugar-free jam.
Notes
These waffles can be meal-prepped and stored in the fridge for up to 3 days or frozen for later use. Variations with cinnamon or vanilla can be added based on taste.
