Description

Delicious and healthy Skyr waffles, a protein-rich and low-calorie gluten-free option perfect for breakfast or a snack.


Ingredients

Scale
  • 2 medium eggs
  • 1 pinch of salt
  • 70 grams erythritol (or xylitol)
  • 200 grams Skyr
  • 200 grams spelt flour (or wheat flour)
  • 1 teaspoon baking powder (slightly heaped)
  • 1/2 teaspoon baking soda
  • 80 milliliters sparkling water (highly carbonated)

Instructions

  1. Separate the eggs carefully, ensuring no yolk gets into the egg whites.
  2. Beat the egg whites with a pinch of salt until stiff to give the waffle mixture more volume.
  3. Whip the egg yolks with the erythritol in another bowl until frothy.
  4. Mix the spelt flour with the baking powder and baking soda in a separate bowl.
  5. Stir the Skyr with the sparkling water in another bowl for moisture and creaminess.
  6. Add the dry ingredients and the Skyr-sparkling water mixture into the egg yolk-erythritol mix.
  7. Fold the beaten egg whites gently into the batter using a spatula to keep the waffles fluffy.
  8. Preheat the waffle iron and lightly grease it before adding the batter.
  9. Bake until golden brown, about 6-8 waffles.
  10. Enjoy warm, plain or topped with fresh fruit, yogurt, or sugar-free jam.

Notes

These waffles can be meal-prepped and stored in the fridge for up to 3 days or frozen for later use. Variations with cinnamon or vanilla can be added based on taste.
