Ingredients

- 1 cup quinoa, rinsed
- 2 cups vegetable broth or water
- 1 can (15 oz) chickpeas, drained and rinsed
- 2 tbsp olive oil
- 1 tsp smoked paprika
- 1/2 tsp cayenne pepper (adjust to taste)
- 1/2 tsp garlic powder
- Salt and pepper to taste
- 1 cup cherry tomatoes, halved
- 1 avocado, diced
- 1 cup spinach or kale, chopped
- Juice of 1 lime
- Fresh cilantro for garnish (optional)
Instructions
- Combine 1 cup of rinsed quinoa with 2 cups of vegetable broth or water in a medium saucepan. Bring to a boil over medium-high heat.
- Reduce the heat to low, cover, and let it simmer for about 15 minutes.
- Remove from heat and let sit covered for an additional 5 minutes.
- Preheat a skillet over medium heat and add 2 tablespoons of olive oil.
- Add drained chickpeas and season with smoked paprika, cayenne pepper, garlic powder, salt, and pepper. Sauté for about 5-7 minutes until slightly crispy.
- In a large bowl, mix the cooked quinoa, chickpeas, cherry tomatoes, avocado, and spinach or kale.
- Drizzle lime juice over the mixture and gently toss to combine.
- Serve warm or at room temperature, garnished with fresh cilantro if desired.
Notes
Rinse quinoa before cooking to remove saponin. Adjust spice levels according to preference.
