- 4 large bell peppers
- 1 pound ground beef
- 1 cup cooked rice
- 1 small onion, diced
- 2 cloves garlic, minced
- 1 can diced tomatoes
- 1 teaspoon Italian seasoning
- Salt and pepper to taste
- 1 cup shredded cheese (optional)
Instructions
- Preheat the oven to 375°F (190°C).
- Cut the tops off the bell peppers and remove seeds and membranes.
- Cook the ground beef in a skillet over medium heat until browned, about 5-7 minutes.
- Add diced onion and minced garlic, sauté until the onion is translucent, about 3-4 minutes.
- Mix in cooked rice, diced tomatoes, Italian seasoning, salt, and pepper. Let simmer for 5 minutes.
- Stuff each bell pepper with the beef and rice mixture, adding cheese on top if desired.
- Place stuffed peppers in a baking dish, add a splash of water, cover with foil, and bake for 30 minutes.
- Remove the foil and bake for an additional 10-15 minutes until the peppers are tender.
