Description

A delightful dish combining tender chicken, fresh vegetables, and creamy peanut sauce with rice noodles for a satisfying meal.


Ingredients

  • 8 oz rice noodles
  • 1 lb boneless, skinless chicken breasts, thinly sliced
  • 2 tbsp vegetable oil
  • 1 red bell pepper, sliced
  • 1 cup snap peas
  • 2 green onions, chopped
  • 2 cloves garlic, minced
  • 1/4 cup creamy peanut butter
  • 3 tbsp soy sauce
  • 2 tbsp honey or maple syrup
  • 1 tbsp lime juice
  • 1/2 tsp red pepper flakes (optional)
  • Chopped peanuts and cilantro for garnish

Instructions

  1. Bring a pot of water to a boil. Add the rice noodles and cook according to package instructions, about 4-6 minutes. Drain and rinse under cold water.
  2. Heat 2 tablespoons of vegetable oil in a large skillet or wok over medium-high heat. Add the chicken and cook for 5-7 minutes until golden brown and cooked through.
  3. Add the sliced red bell pepper, snap peas, and minced garlic. Stir-fry for 3-4 minutes until vegetables are tender-crisp.
  4. In a small bowl, combine peanut butter, soy sauce, honey (or maple syrup), lime juice, and red pepper flakes. Whisk until smooth.
  5. Pour the peanut sauce over the chicken and vegetables, stirring to coat evenly. Add the cooked noodles and toss gently.
  6. Serve hot, garnished with chopped peanuts and fresh cilantro.
