- 8 oz rice noodles
- 1 lb boneless, skinless chicken breasts, thinly sliced
- 2 tbsp vegetable oil
- 1 red bell pepper, sliced
- 1 cup snap peas
- 2 green onions, chopped
- 2 cloves garlic, minced
- 1/4 cup creamy peanut butter
- 3 tbsp soy sauce
- 2 tbsp honey or maple syrup
- 1 tbsp lime juice
- 1/2 tsp red pepper flakes (optional)
- Chopped peanuts and cilantro for garnish
Instructions
- Bring a pot of water to a boil. Add the rice noodles and cook according to package instructions, about 4-6 minutes. Drain and rinse under cold water.
- Heat 2 tablespoons of vegetable oil in a large skillet or wok over medium-high heat. Add the chicken and cook for 5-7 minutes until golden brown and cooked through.
- Add the sliced red bell pepper, snap peas, and minced garlic. Stir-fry for 3-4 minutes until vegetables are tender-crisp.
- In a small bowl, combine peanut butter, soy sauce, honey (or maple syrup), lime juice, and red pepper flakes. Whisk until smooth.
- Pour the peanut sauce over the chicken and vegetables, stirring to coat evenly. Add the cooked noodles and toss gently.
- Serve hot, garnished with chopped peanuts and fresh cilantro.
