Description
Delicious and healthy vegetarian quesadillas filled with fresh vegetables and protein-rich ingredients.
Ingredients
Scale
- 4 medium tortillas
- 1 large sweet potato
- 2 avocados
- 1/2 cup black beans (rinsed and drained)
- 1/4 cup corn (rinsed and drained)
- 1 mini red bell pepper
- 1 mini orange bell pepper
- 1 teaspoon jalapeno (chopped – optional)
- 1 tablespoon homemade taco seasoning
- 1 cup cheddar or pepper jack cheese
- 1 tablespoon butter (for frying)
- 2 teaspoons olive oil (divided)
- Fresh cilantro
- Lime juice
- Your favorite salsa
- Sour cream
Instructions
- Prepare the filling by peeling and dicing the sweet potato. Cook it in a pot of water until soft, about 15 minutes. Allow to cool. In a large bowl, mix the cooled sweet potatoes, black beans, corn, bell peppers, jalapeno (if using), and taco seasoning. Make sure everything is well combined.
- Assemble the quesadilla by placing a tortilla on a clean surface. Spread a generous amount of filling on one half of the tortilla. Sprinkle cheese over the top and fold the other side of the tortilla over the filling. Press gently to seal.
- Heat a skillet over medium heat. Add one teaspoon of olive oil and let it heat up. Place the quesadilla in the skillet and fry for about 3-4 minutes until golden brown. Carefully flip and fry the other side until golden brown. Repeat with remaining tortillas.
- Serve the quesadillas by cutting them into quarters and topping with fresh cilantro, lime juice, your favorite salsa, and sour cream.
Notes
For a healthier option, reduce the cheese. These can be prepared in advance and stored in the fridge.
