Description

Delicious and healthy vegetarian quesadillas filled with fresh vegetables and protein-rich ingredients.

Ingredients

Scale
  • 4 medium tortillas
  • 1 large sweet potato
  • 2 avocados
  • 1/2 cup black beans (rinsed and drained)
  • 1/4 cup corn (rinsed and drained)
  • 1 mini red bell pepper
  • 1 mini orange bell pepper
  • 1 teaspoon jalapeno (chopped – optional)
  • 1 tablespoon homemade taco seasoning
  • 1 cup cheddar or pepper jack cheese
  • 1 tablespoon butter (for frying)
  • 2 teaspoons olive oil (divided)
  • Fresh cilantro
  • Lime juice
  • Your favorite salsa
  • Sour cream

Instructions

  1. Prepare the filling by peeling and dicing the sweet potato. Cook it in a pot of water until soft, about 15 minutes. Allow to cool. In a large bowl, mix the cooled sweet potatoes, black beans, corn, bell peppers, jalapeno (if using), and taco seasoning. Make sure everything is well combined.
  2. Assemble the quesadilla by placing a tortilla on a clean surface. Spread a generous amount of filling on one half of the tortilla. Sprinkle cheese over the top and fold the other side of the tortilla over the filling. Press gently to seal.
  3. Heat a skillet over medium heat. Add one teaspoon of olive oil and let it heat up. Place the quesadilla in the skillet and fry for about 3-4 minutes until golden brown. Carefully flip and fry the other side until golden brown. Repeat with remaining tortillas.
  4. Serve the quesadillas by cutting them into quarters and topping with fresh cilantro, lime juice, your favorite salsa, and sour cream.

Notes

For a healthier option, reduce the cheese. These can be prepared in advance and stored in the fridge.
